    {"id":319,"date":"2019-01-17T20:47:36","date_gmt":"2019-01-17T13:47:36","guid":{"rendered":"http:\/\/student-activity.binus.ac.id\/home\/?p=319"},"modified":"2019-01-17T20:47:36","modified_gmt":"2019-01-17T13:47:36","slug":"potato-soup-with-bacon","status":"publish","type":"post","link":"https:\/\/student-activity.binus.ac.id\/home\/2019\/01\/potato-soup-with-bacon\/","title":{"rendered":"Potato Soup with Bacon"},"content":{"rendered":"<p>Ingredients<br \/>\n6 slices thick cut bacon diced<br \/>\n1 small yellow onion diced<br \/>\n3 stalks of celery diced<br \/>\n2 carrots peeled and diced<br \/>\n2 cloves garlic minced<br \/>\n1\/3 cup all purpose flour<br \/>\n2 cups chicken stock<br \/>\n2 pounds russet potatoes peeled and diced<br \/>\n2 cups whole milk<br \/>\nsalt and pepper to taste<br \/>\nshredded cheddar cheese for topping<br \/>\ndiced scallions for topping<br \/>\nbacon pieces for topping<\/p>\n<p>Instructions<br \/>\n1. In a large heavy bottomed stock pot, cook the bacon until just crispy.<br \/>\n2. Add in the onion, celery, carrots, and garlic.  Cook until the vegetables are soft. About 5 to 7 minutes.<br \/>\n3. Stir in the flour into the vegetable mixture.  Then very slowly add the chicken stock.  It works best to add a few tablespoons at a time, whisking throughout in between.<br \/>\n4. Bring the mixture to a boil and add in the potatoes.  Turn down the heat to a simmer, stirring regularly, and cook until the potatoes are fork tender. About 20 to 30 minutes.<br \/>\n5. Stir in the milk and allow the milk to cook through, about 1 to 2 minutes.  Top with cheddar cheese, bacon, and diced scallions.
